NEW!  PARTY TRAYS FOR THE HOLIDAYS - Prepare a party tray of festive foods for holiday guests.  Men who like something robust and women who want something fancy will be pleased with a party tray that can satisfy both.  The instructor, Shirley Splittstoesser, will take into account that foods are appreciated with both the eye and the taste buds while saying “Welcome to my home.”  Class meets Oct. 4.

NEW!  INTER-GENERATIONAL COOKING - When children come home hungry from school, skip the sugar cookies and guide them to make easy, nutritious snacks.  You will learn recipes that your children or grandchildren can make independently “from scratch.”  These will appeal to children from preschool thru high school:  Cheese Quesadilla, Layered Scrambled Egg Sandwich, Loyalty Salad, Peanut Butter Cookies and Awesome Spaghetti.  (An optional cookbook by the author/instructor will be available for $20.)  Class meets Nov. 1.  Instructor: Shirley Splittstoesser.

Come join Tien Douglas to sample some signature Vietnamese and American dishes in these hands-on classes.

 

MOZZARELLA, STRING & RICOTTA CHEESES - Within 30 minutes, we will turn one gallon of whole milk into mozzarella cheese and string cheese in this hands-on class.  The whey will be collected to make ricotta cheese.  A soup and dessert will be provided with the class.  Class meets Sept. 13.

VIETNAMESE VERMICELLI NOODLE DISHES - Rice vermicelli noodles will be topped with a variety of beef, pork and chicken, served with lettuce, cucumbers, cilantro and mint.  Class meets Sept. 29.

NEW!  QUESO BLANCO CHEESE - We will  make a queso blanco cheese which is a fresh, creamy, soft, mild, unaged “white” cheese that originated in Spain, spread to Mexico and to other American countries.  This white cheese is a creamy addition to recipes and often used for a topping for spicy Mexican dishes.  Class meets Oct. 14.

VIETNAMESE MEAL FEATURING PHO - Pho is a popular beef noodle dish that has cloves, star anise, cinnamon, ginger and onions.  It will be served with an appetizer and dessert.  Class meets Oct. 25.

NEW!  STEAMED VIETNAMESE DISHES - We will be making steamed rice noodles (bahn hoi), steamed rice rolls (bahn cuon) and small steamed rice cakes or rice pancakes (banh beo).  The first two dishes have a pork topping.  The steamed rice cakes are  topped  with  a mung bean paste and shrimp.  Class meets Nov. 10.
