FEEDING HEALTHY FAMILIES - With the rising epidemic of childhood obesity and its impact on children’s health, parents and care-givers need more tools to help create healthier home environments.  This class will explore how to provide a balanced life-long approach to feeding healthy families and look at making smart mealtime choices and wise food buying solutions for busy families.  Healthy pre-prepared snack items will be sampled to show that healthy foods can also taste good.  Instructor, Stacey Krawczyk, is a registered dietitian specializing in family and child nutrition education.  A busy mom of two young boys, she has lots of practical experience to add to her professional training.  Class meets Feb. 25.

A TASTE OF VIETNAMESE CUISINE:

COOKING WITH TIEN

 

Would you rather drive a 200-mile round trip to taste some of the most delicate and exotic Asian cuisine, or come join Tien Douglas in Urbana to sample some of the same signature Vietnamese dishes?  Unlike the more widely known Korean, Japanese, and Chinese cuisine, Vietnamese restaurants are few and far between in the Midwest.  In this sequence of four meetings, Tien will feature some of the classic appetizers, soups, and entrees of the Vietnamese kitchen that you can cook in your home.  

 

NEW! SPRING ROLLS - Learn to prepare the Vietnamese variation of the classic Asian appetizer, the spring roll, often referred to as an egg roll.  A Vietnamese spring roll features crab and taro potato among its fillings, giving it a distinctive flavor.  Class meets Jan. 29.

APPETIZERS - A favorite at all of Tien’s parties are her fried won tons.  Learn her secrets of these irresistible treats.  In addition, we will prepare the light and subtle summer rolls, wrapped in thin rice paper with a careful mixture of thinly sliced pork, shrimp, mint, and vermicelli, that is perhaps the classic Vietnamese appetizer.  These are each served in a special manner, and each with flavorful sauces that will be presented.  Class meets Feb. 26.

NEW! BEEF NOODLE SOUP - Comfort food to Vietnamese, whether for breakfast, lunch, or dinner, means a large and hot bowl of beef noodle soup known as Pho. Pho actually has many variations, but we will enjoy Pho Tai, which includes tender slices of beef served in a hot and uniquely fragrant and aromatic broth over a bed of special noodles.  The characteristic fragrance of a good bowl of Pho is achieved through a careful blend of spices, and this delicate broth is further flavored with beef to create a soup that is the most widely known Vietnamese dish for its unforgettable qualities of subtlety and hardiness.  Class meets Mar. 25.

BARBEQUED BEEF WITH LEMONGRASS OVER VERMICELLI - This classic entree, known as Bun Thit Bo Nuong, further exemplifies the subtlety of Vietnamese Cuisine, by a surprising combination of barbequed beef and the fragrant mainstay of Vietnamese cooking, lemongrass, served with sliced cucumbers and roasted peanuts over vermicelli.  The special marinade for the beef is revealed along with the delicate fish sauce blend that lightly covers this dish that is full of flavor and texture.  Class meets Apr. 22.

Many have dined out to enjoy the wonders of Indian cuisine, but few ever attempt recreating these delectable dishes at home.  It will come as a great and pleasant surprise that high quality Indian cuisine can be easily cooked at home.  Malika Kancherla presents some wonderful dishes that are both healthy and abundantly flavorful.

 

NEW! PANEER, PANEER MAKHANI WITH RICE, CHILLI PANEER - This class will show you how to make paneer, which is a soft cheese.  Paneer is a versatile food that can be used in a great many ways.  In this meeting, an appetizer chilli paneer will be introduced.  In addition, we will make paneer makhani, a curry cooked in cream, tomato paste, onion paste and some Indian spices.  Class meets Jan. 31. NEW! SHRIMP CURRY WITH RICE - Come and learn a wonderful combination of seafood and Indian curry served over rice, known as Jeera Rice.  Shrimp curry is cooked with ginger, garlic, tomatoes and onions with the spices that make Indian curry so distinct from all others.  Class meets Feb. 21.

CHICKEN 65 AND BUTTER CHICKEN - Chicken is the theme for this session, and we begin with a light and savory appetizer of marinaded chicken cooked in lime juice called Chicken 65.  This is followed by Butter Chicken, which is a richly flavored dish cooked in tomato paste, with almonds and cream.  Saving the best for last, the meeting concludes with the dessert Kheer, vermicelli cooked in milk and cardamom powder.  Class meets Mar. 6.
